about this ramen: on january 12th, we introduce the tonkotsu gyokai miso ramen kit, and holy heck is it good! one morning in autumn 2022 i woke up with a weird instinct to try and recreate the ramen from the famous anime naruto, and this was the outcome. rich tonkotsu soup cut with niboshi-katsuobushi dashi. miso tare and garlic-ginger aroma oil. a thick, large portion of noodles. 😋 plenty of toppings..+ Jay Rayner - The Observer: "The tonkotsu broths, made by boiling pork bones for a dozen hours or more until the stock takes on a white, creamy, lip-smacking, gelatine-rich vigour, had profound depth.
